Perfect Picnic Sandwich


Yield: Makes 2 servings

Prep Time: 15 minutes

3 TablespoonGreek yogurt

1 Tablespoonlemon juice

1 teaspoon Kikkoman® Rice Vinegar

1 Tablespoonbasil, chopped

¼ teaspoon garlic powder

¼ teaspoon salt and pepper

4 large slices of artisan bread or 2 rustic buns

4 oz. goat cheese

½ cucumber, sliced

1 green pepper, sliced

½ cup alfalfa sprouts

1 avocado, sliced


Mix together yogurt, lemon juice, vinegar, basil, garlic, salt, and pepper. Set aside so that the flavors combine while you assemble the sandwich.

To create each sandwich, spread ½ of the goat cheese onto one side of the bread or bun and top with cucumbers, green peppers, sprouts, a drizzle of the yogurt dressing, and then avocado. Place the second slice of bread on top and enjoy!
