Mashed Potato Patties

It seems that whenever I make mashed potatoes, I always make way too much. No matter how much I’ve tried to calculate and estimate, at the end of the dinner, there’s always a leftover container filled with mashed potatoes. We could just eat them with tomorrow’s dinner, but day-old mashed potatoes aren’t quite as good as fresh.

There are a couple ways to get around this. You could freeze the mashed potatoes to enjoy with another meal. If you’ve got enough leftover potatoes, you could simply add the potatoes to a saucepan and add in milk and stir up a batch of potato soup. Or you could make everyone super duper happy and make some of these easy leftover mashed potato patties

4 cups mashed potatoes prepared as you usually make mashed potatoes
1/2 cup milk
1/3 cup fine dry bread crumbs
¼ cup yellow onion minced
¼ cup green onion minced
1 egg beaten
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon garlic powder

In a large bowl combine all ingredients, stirring so all the ingredients are completely combined.
With your hands, shape into small patties. On average you should make about 14-16 patties from this recipe.
Coat a skillet lightly with olive oil and heat on medium-high heat. Add potato patties, cooking about 4-5 minutes on each side, or until browned.
Serve as is, or with ketchup or sour cream.
