Low Carb Chicken Cordon Bleu Casserole – Easy Keto

Can you believe the summer is just about over and the kids are heading back to school? It seems like the summer just flew by this year!

My youngest daughter will be starting preschool the first week in September. Although she could have started last winter after turning 3 years old, we didn’t feel she was ready because her birthday is in late December. We are hoping that the program will get her ready to start kindergarten next year.

I expect things to start getting really busy for us once our daughter starts school. When our older kids began preschool, it seems there was always something going on. There’s the frequent birthday parties, field trips, and volunteer work at the school. And to top it off, we are looking to get our daughter into some sport activities when she turns 4 in December.

1/4 cup mayonnaise
1/4 cup heavy cream
8 ounces cream cheese softened
1/4 cup Parmesan cheese
1/2 teaspoon garlic powder
dash fresh ground pepper
8 ounces Swiss cheese chopped
1 package Hillshire Farm® Farm Classics® Lunchmeats Black Forest ham chopped, 16 ounces
1 bag Tyson® Grilled & Ready® Chicken frozen pulled chicken 20 ounces
1/2 cup chicken bone broth optional (see notes)
1/2 cup crushed pork rinds optional

Mix mayonnaise, heavy cream and cream cheese until well combined.
Stir in the Parmesan cheese, garlic powder, garlic powder, and pepper.
Add in the Swiss cheese , ham, chicken, and chicken broth.
Spread mixture out into a 9×13-inch casserole dish. Top with crushed pork rinds if desired.
Bake at 350°F for 20-25 minutes or until top begins to brown.
